Limited and dull? Hardly. Each Zelda has a pretty deep and detailed canon story, it's just a matter of paying attention to detail. Navi represented the "mentor", a key character in any part of the Hero's Journey canon. The mentor is never meant to stay- they are they to be of assistance, help the hero of the story gain experience and grow as a person through their journey, and then they depart once their job is complete. That is why Navi left.
Similarly, Midna, while she and Link grew close, was also Link's mentor throughout TP. Even she ended up leaving. Yes, shadow and light must remain separate, and she also had her own realm to protect, but she had also completed her job as Link's "mentor", and like in every story, Midna (the mentor) left.
So, when we see Link leaving at the end, he's no longer that innocent boy he was before his journey. He's become stronger and wiser... would he seek new adventures? Perhaps he'd join Rusl, Ashei, and Shad in the journeys one day? And, if he does seek new adventures, who'd be the next "mentor" character, and what would they be like? Personally, I think that TP's Princess Zelda would serve as a great mentor character. She's strong, wise, and very... how should I put this- stoic, but she still has a heart. I know it's a silly comparison, but she's much like Star Wars' Yoda, in the fact that she has that wisdom and reserve. Yoda was also a mentor character, so I think that TP's Zelda would fit that role very nicely.
